Abstract

In this paper we make a thorough analysis of food from a sociological perspective. But not only. To do this, we first separately carry out a state of the art on the relationship of food with memory, gender, globalization and risk society in the late modernity. Then, in order to cross all these variables, as well as the question of food as an axis of national identity and perennial cultural trait, we analyze, first, a brief history of Portuguese gastronomy throughout history and then the analysis of the most typical Portuguese gastronomic dish: codfish.
